Impossible Coconut Pie.

This recipe is so easy I don't know why I've not come across it before! Everything gets mixed together but, after cooking, you end up with a pastry base with coconut and egg custard filling / top!

I have found variations on this theme that I will be adding in due course, thanks to Caroline, MW3MCJ, for passing this on.

 PREP TIME  2 Min 
 COOK TIME  1 Hr 
 READY IN  1 Hr 2 Min 
 SERVES  4 - 6 




INGREDIENTS

  • 4 medium eggs
  • ½ cup margarine
  • ½ cup self raising flour
  • 2 cups milk
  • ½ cup sugar
  • 1 cup desiccated coconut
  • 2 teaspoons Vanilla Essence




DIRECTIONS

  1. Preheat oven to 325 F / 160 C / Gas mark 3.
  2. Place all the ingredients into a food processor or blender and whizz until compleatly mixed.
  3. Turn out the mixture into a greased 10 inch (25 cm) pie dish and cook until the centre feels firm (about 1 hour).
  4. Serve hot or cold with custard or cream.
