Tuna Fish Cakes.

INGREDIENTS
- 2 (6 ounce) cans tuna, drained and flaked
- 1 cup seasoned bread crumbs
- 1 egg, beaten
- 1/4 cup finely chopped spring onion
- 1/4 cup finely chopped sweet red pepper
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic
- 1 tablespoon butter (to cook with)
DIRECTIONS
- In a large bowl, combine the tuna, 1/3 of the bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice and garlic.
- Divide mixture into eight portions; shape into 2-inch balls and roll the balls in the remaining bread crumbs.
- When coated with the breadcrumbs, flatten to about 1/2 inch thick cakes.
- Melt the butter in a large nonstick skillet or frying pan. Cook and the tuna fish cakes in the butter for 3-4 minutes on each side or until golden brown.
Serve immediately with mashed potatoes and vegetables or chips.
