Tuna Fish Cakes.

INGREDIENTS

  • 2 (6 ounce) cans tuna, drained and flaked
  • 1 cup seasoned bread crumbs
  • 1 egg, beaten
  • 1/4 cup finely chopped spring onion
  • 1/4 cup finely chopped sweet red pepper
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic
  • 1 tablespoon butter (to cook with)


DIRECTIONS

  1. In a large bowl, combine the tuna, 1/3 of the bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice and garlic.
  2. Divide mixture into eight portions; shape into 2-inch balls and roll the balls in the remaining bread crumbs.
  3. When coated with the breadcrumbs, flatten to about 1/2 inch thick cakes.
  4. Melt the butter in a large nonstick skillet or frying pan. Cook and the tuna fish cakes in the butter for 3-4 minutes on each side or until golden brown.
    Serve immediately with mashed potatoes and vegetables or chips.
