Sweet and Sour SPAM®.

INGREDIENTS

  • 340g can of SPAM®, cut into sticks
  • 432g can pineapple chunks in natural juice
  • 30ml/2tbsp Vegetable oil
  • 2 Carrots, peeled and sliced into sticks
  • 1 Red pepper, deseeded and sliced
  • 100g/4oz Baby corn, halved lengthways
  • 1 Bunch spring onions, trimmed and sliced
  • 1 Garlic clove, crushed
  • 2.5cm/1in Piece root ginger, peeled and chopped
  • 15ml/1tbsp Tomato puree
  • 15ml/1tbsp Clear honey
  • 15ml/1tbsp White wine vinegar
  • 15ml/1tbsp Soy sauce
  • 15ml/1tbsp Cornflour




DIRECTIONS

  1. Drain the juice from the pineapple and mix the juice with 100ml/4floz water, the tomato puree, honey, vinegar and soy.
  2. Mix the cornflour with a little cold water to a make smooth paste. Set aside.
  3. Heat the oil in large wok or frying pan, add the SPAM®, carrots, pepper and corn and stir fry for 4 minutes.
  4. Add onions, garlic and ginger to the wok and stir fry for 1 minute.
  5. Add the pineapple cubes, juice mix and cornflour paste to the wok and bring to the boil.
  6. Cook for 1 minute or so, stirring until thickened.
    Serve immediately with noodles or rice.
