INGREDIENTS
4 Pork Chops (1 per person)
1 or 2 sliced apples
1 sliced onion
Fresh (or dried) sage leaves
Cider or stock (the sweeter the cider, the sweeter the sauce)
DIRECTIONS
Pre heat the oven at 180 C / 350 F / Gas mark 4.
Layer the onion in the bottom of a large casserole or oven proof dish and sprinkle some sage leaves on top.
Layer the apples on the onion/sage and sprinkle more sage on top of that.
Place the chops on the top and sprinkle more sage.
Pour the cider or stock in, to cover the ingredients.
Cover the dish (if it has no lid use some baking foil, shiney side out) and place in the centre of the oven for 45 minutes.
Serve with creamy mashed potatoes and vegetables.
For a creamy sauce, stir in crème fraîche to the liquid, after removing the chops, apple and onion, and warm on the hob.
When using wine or other alcohol in dishes which children may eat, ensure that the dish
is cooked at a high temperature for a few minutes to burn off the alcohol (eg in a gravy or meat sauce), or alternatively with casseroles, to cook long and slow for the same effect.
