Chilli Con Carne.

 SERVES  4 - 6 


INGREDIENTS

  • 1 lb minced beef
  • 1 large onion
    (peeled and chopped)
  • 1 medium carrot
    (peeled and chopped)
  • 2 oz tomato puree
  • 1 large tin chopped tomatoes
  • ¾ pint water
  • 1 oz flour
  • ½ - 1 oz chilli powder
    (depends how hot you want it!)
  • 1 large tin red kidney beans
  • ¼ lb mixed peppers
    (diced)
  • Pinch of mixed herbs
  • Salt and Pepper to taste

DIRECTIONS

  1. In a large saucepan dry fry the mince and onion.
  2. Add tomato (tin and puree), chilli powder, water, carrot, salt and pepper, bring to the boil, cover and simmer for 1 hour.
  3. Add the beans and peppers and cook for a further 15 minutes.
  4. Check for seasoning and add more if required. thicken with the flour and simmer for another 2 - 3 minutes.
  5. Serve with rice, jacket potato or chips.
